Super Easy banana bread

When i've got overripe bananas one of my favorite thing to do it's to bake a banana bread as it's super simple and very quick.
Here's the recipe that i use, you can add choc chip, nuts or dried fruits. I like to consume what i've got in the cupboard and this time i had some desiccated coconut that was expiring soon.
Ingredients
285g plain flour
1 tsp bicarbonate of soda
pinch of salt
80 ml vegetable oil
200 gr demerara sugar
4 eggs
2 ripe banana, mashed
85ml milk
1 tsp garam masala
2 tsp cinnamon
75 % dark chocolate
100 gr desiccated coconut
Method
Preheat the oven
Sift the flour, sugar, bicarbonate of soda, cinnamon, coconut, garam masala and salt into a large mixing bowl.
In a separate bowl, mix the oil with the eggs, mashed bananas & milk Fold in the flour mixture.
Grease a 20cm x 12.5cm loaf tin and pour the cake mixture into the tin.
Transfer to the oven and bake for about an hour, or until well-risen and golden-brown.
Remove from the oven and grate the dark chocolate on top of the hot banana bread, the heat will met the chocolate and transfer onto a wire rack to cool completely before serving.
